Computed from USDA FoodData Central SR Legacy (April 2018) per-100g values applied to ingredient gram weights derived from stated recipe quantities (grams used directly) or from USDA SR Legacy food_portion.csv household measures (tbsp/tsp/clove/'medium' item references) where recipe used volume/count units — see 'calculation' lines for each ingredient's basis. LOWER-BOUND ONLY: 'salt and pepper'/unspecified salt, unspecified sauces/dressings, and garnish-only items were excluded per instructions (no gram quantity given), so actual sodium (and to a lesser extent kcal/fat/carbs from such omissions) is almost certainly higher than shown. Unspecified/omitted ingredients: none.

Calculation sources
  • sashimi-grade salmon: 120.0 g -> USDA SR Legacy fdc 175167 (Fish, salmon, Atlantic, farmed, raw) - ANALOGUE basis (farmed Atlantic salmon raw profile); raw weight basis
  • sushi rice, seasoned: 70.0 g -> USDA SR Legacy fdc 168930 (Rice, white, medium-grain, cooked, unenriched) - used as general 'sushi rice, cooked/seasoned' analogue (no sushi-rice-specific SR Legacy entry); seasoning (vinegar/sugar/salt) NOT separately added
  • soy sauce: 16.0 g -> USDA SR Legacy fdc 174277 (Soy sauce made from soy and wheat, shoyu - regular sodium); USDA portion 1 tbsp = 16 g
  • wasabi: 2.5 g -> USDA SR Legacy fdc 168583 (Wasabi, root, raw) - ANALOGUE for prepared wasabi paste; 1 tsp assumed ~5 g (generic teaspoon density, not a direct SR Legacy portion for paste form)
  • pickled ginger: 5.0 g -> USDA SR Legacy fdc 169231 (Ginger root, raw) - ANALOGUE for pickled ginger (no pickled-ginger entry in SR Legacy; raw ginger used, so sugar/vinegar from pickling liquor NOT captured, likely understates sugar/sodium); 1 tsp assumed ~5 g
